CHAPATHI / INDIAN FLAT BREAD

As we all know "Chapathi" is the most common dish in all homes . It is most healthy dish and everybody likes to eat daily . It is done using wheat flour .  It can be prepared for break fast or lunch or dinner , it suits for any time of the day . As all of us know chapathi very well there is nothing more to tell about it . so lets see how to prepare  chapathi .....

Ingredients :-
  1. Wheat flour              2 cup
  2. Salt                          1/2 tsp
  3. Water                       1/2 - 1 cup
  4. Curd / butter milk    1/2 cup (optional)
  5. Oil
  6. Rice flour
Method:-
In a mixing bowl add wheat flour and salt and mix well . If you are adding curd or butter milk (it gives very soft texture to chapati) then reduce the water quantity to 1/2 cup , other wise 1 cup is needed , you can add 1-2 tsp of oil while mixing but i don't as i add curd it gives softness then why to increase calorie  . Mix well and knead well to make dough .
Close the dough with a lid , let it set for 10-15 min.

Take small orange size dough and make round shape ball and press it , dust it with little rice flour and roll to make small round shape as shown below .
Now spread little oil say 1/4 tsp on it then spread rice flour / roasted gram powder .
Fold it to half again repeat same spreading oil , rice flour/ roasted gram powder.
Again fold it  to make triangle shape . Now start rolling from corners and roll on centre  to make round shape chapathi.
In between dust chapathi using rice flour so that u can easily roll it.
Heat the thava for 2- 3 min on high flame  then keep low , now spread few drops of oil on thava , place the chapathi on it  , & again spread few drops of oil on chapathi . keep medium flame .
flip and cook other side too. Once brown spots appear on chapathi it means its done .

Thats it  hot -hot chapathi is  ready to serve , serve it with any curry , chutney , sambar . Repeat  same procedure with remaining dough .

MALLIGE IDLI / KUSHBOO IDLI

"Mallige Idli " sounds different na ? hmm i too felt same when heard first time , but they were too good when i tasted first time . In Bangalore we can get it in restaurants . These are very soft , spongy idli's. You can use the  remaining batter to make "dosa" and they come crispy with golden colour awesome dosa if u spread thin , if u spread thick you will get soft spongy set dosa but to prepare dosa add little more water so that you can spread easily. Once i prepare this batter i do all these for 2 days .
Hope you all try and enjoy this recipe  :) .

Ingredients:-
  1. Raw rice                             4 cup
  2. Sabudana                            1/2 cup
  3. Urad dal                             1 cup
  4. Poha thick type                  1 cup
  5. Salt
  6. Water to grind
Method:-
Wash  & Soak all the ingredients separately , soak rice n sabudana 4-5 hrs and poha & urad dal for 1- 1& 1/2 hrs. If you are using small type sabudana then 4-5 hrs is enough , for big sabudana type you need to soak previous night other wise morning soak in hot water evening you can grind it.

Mallige Idli, Kushboo Idli, soft sponge idli , diet food , south indian break fast

First grind only urad dal to very smooth texture by adding little by little water . Next  add sabudana , poha and raw rice all together and grind but now don't add water if needed add in very controlled way so grind till you get smooth batter .
